Tahini Vinaigrette

Instructions

1. Mix the base ingredients:

In a medium bowl, combine the tahini paste, lemon juice, orange juice, and olive oil.

2. Add optional ingredients:

If using, add the finely minced garlic and honey or maple syrup to the bowl.

3. Whisk the vinaigrette:

Whisk the ingredients together until smooth and well combined. The mixture may thicken initially due to the tahini reacting with the lemon juice.

4. Adjust the consistency:

If the vinaigrette is too thick, add one ice cube at a time until you reach your desired consistency. Continue whisking until smooth.

5. Season:

Season with sea salt flakes and pepper to taste. Whisk again to ensure the seasonings are evenly distributed.

6. Serve:

Transfer the vinaigrette to a serving container or jar. Shake or stir well before each use.

7. Storage:

Store any leftover vinaigrette in an airtight container in the refrigerator for up to one week. The dressing may thicken as it chills, so you may need to add a little water and stir again before serving.
