Fasolakia: Green Beans Stew

Fasolakia is a simple yet delicious Greek dish that brings the flavors of the Mediterranean to your table. With tender green beans, simmered in a rich tomato and olive oil sauce, this hearty, plant-based recipe is perfect for a light lunch or a comforting dinner.

1. Prepare the green beans:

Wash the green beans thoroughly. Trim the tips of each bean and pull down the fiber along the side to remove it. 

2. Sauté the vegetables:

In a soup pot, heat a generous amount of olive oil. Add the diced onion, celery, carrots, garlic, and bay leaves. Sauté until the vegetables have softened and are fragrant, about 5 minutes. 

 

3. Add bulgur and beans:

Stir in the bulgur wheat and the prepared green beans. Sauté for another couple of minutes until everything is coated and the beans begin to soften. 

4. Add tomatoes:

Pour in the crushed tomatoes and the diced fresh tomato. Stir well to combine. Adjust the seasoning with salt, pepper, and a pinch of sugar. 

5. Simmer:

Cover the pot and reduce the heat to medium. Let the mixture simmer for about 25 to 30 minutes, or until the beans are tender and all the flavors have melded together. 

6. Serve:

Spoon the green bean stew into bowls. Serve with toasted sourdough on the side, topped with crumbled feta cheese and fresh dill tips for garnish.  

Ingredients

  • 1 small white onion, diced 
  • 2 celery stalks, diced 
  • 2 medium-sized carrots, diced 
  • 1 garlic clove, finely diced 
  • 2 bay leaves 
  • 1/2 cup Bulgur
  • 800 to 900 grams of fresh green beans (or substitute with frozen, but fresh is preferred) 
  • 1/2 can crushed tomatoes 
  • 1 medium-sized fresh tomato, diced (for added freshness) 
  • Extra Virgin Olive Oil (for sautéing) 
  • Salt and pepper, to taste 
  • A pinch of sugar 
  • Fresh dill, for garnish 
  • Feta cheese, crumbled (for serving) 
  • Toasted sourdough bread (for serving)
